Description
This wine is made with the Pedro Ximénez varieties, starting from a Natural Sweet base of select berries, where the conditions for extraction, racking, and fermentation have always been done in stainless steel. Once the wine is obtained, it undergoes an analytical and organoleptic control process where the wines that have the desired features are chosen. From there, they go through an oxidative ageing process in American oak barrels that lasts for at least 5 years (this is the time stipulated by CRDO Malaga regulations; our winery actually does this for longer, and there may be wines aged up to 50-60 years).

TASTING
Very dark colour with a wide robe, with the thin meniscus offering iodised tones in the glass. The movement is oily, with thick, dense, coloured legs. Fresh figs, candied fruit, and notes of citrus appear. On the palate, it is fatty, very full-bodied, and succulent with a soft texture.
PAIRING
Pair it with sour fruits, nuts, cheeses, and pâtés.
