Description
The grape is selected from the vineyards grown at the highest altitude and are of the Syrah (85%) and Merlot (15%) variety. Crushed and destemmed at low revolutions in order to maintain the integrity of the grape. Pre-fermentative cryomaceration at very low temperatures. Fermentation starts at 18ºC, and temperature control is never higher than 30ºC. When sufficient extraction is complete, it is devatted, and malolactic fermentation is done with fine lees. The ageing process lasts between 4 and 6 months, depending on the vintage, and uses Bordeaux barrels made from French and American oak. A wine made only from Syrah grapes.

TASTING
It stands out for its width in the mouth, as well as the silky, refreshing sensation it leaves on the palate. Ruby red colour with cardinal iridescence, dense appearance, and a thick leg. In the nose, it is intense, clean, and direct. Scents of coffee, cedar, cocoa, raspberry, blackberry, ink, white pepper, pink pepper, and rosemary.
PAIRING
Pairs perfectly with soups and stews like tripe, lentils, and even roasts, meats, and sausages; a good suggestion with pates. The optimal temperature for consumption is around 17ºC.
